Chicken Burritos with Corn and Tomato Salsa

A healthy and fresh chicken burritos is something that not only tastes good with a burst of flavour in each bite, but is also as healthy and gives you enough energy with a balanced diet all in one wrap! We had a packet of Mission Wraps lying around the house for a little while and we finally decided to make some good ol' Burritos for lunch. This burrito made a great lunch for all five of us in the house that day and everyone loved it. Sweet, sour, salty flavours with the crisp, fresh flavours of the salsa blend together very well with the juicy tender chicken.This is our take on the perfect burrito. Pleasing to the eye with bright colours, this burrito makes you want to dive right in!

This recipe makes you 8 burritos to satisfy you and your guests. You can even allow your guests to fill and make their own burritos for a party!

The first thing you have to do is to marinate your chicken.
Chicken Marinade
  • 3 pieces of chicken breast ( Each piece should be cut into 3 pieces of the same size)
  • Zest of an orange
  • Juice of an orange
  • 2 tbsp brown sugar
  • Salt and pepper
  • 5 cloves of garlic (finely grated)
  • 1 tsp liquid smoke (we used hickory)
  1. Put all the ingredients into a bowl and mix well. Cover with cling film and let the meat marinade for an hour or more. Or you could put it into a ziplock bag and leave in the fridge. (While you let the chicken marinade, you can prepare the salsa and the mayo to accompany the burritos.)
  2. Pan fry the chicken in some vegetable oil on a medium heat.
  3. Let the chicken rest while you reduce the marinade in the pan you used to fry the chicken. 
  4. Slice the chicken into half inch think pieces. Pour the reduced marinade on the slices of chicken and it's ready for the burritos! 

Next you have to prepare the Corn and Tomato Salsa. It's very simple and anyone can do it! 
Corn and Tomato Salsa

  • 1 can of corn
  • 2 1/2 small tomatoes (deseeded and finely diced, the size of a corn kernel will be best)
  • 1 stalk of spring onion (Finely sliced)
  • 1 medium sized red onion (Finely diced)
  • Salt and pepper (to taste)
  • 2 tbsp white vinegar

  1. Drain the water from the can of corn and put the corn into a bowl.
  2. Add the tomatoes, spring onions, onion, vinegar, salt and pepper and mix well.
  3. Let the flavours of the salsa meld together in the fridge while you prepare the mayo and the chicken.
Now for the mayonnaise to spread on your tortilla wraps.
Chilli and Lime Mayo
  • 5 tbsp of mayonnaise
  • Zest of a lime
  • Juice of a lime
  • 2 medium sized green chilies (finely chopped)

  1. Put the mayo into a bowl. 
  2. Zest and juice the lime. 
  3. Add the green chili. 
  4. Mix well.

Condiments to accompany your burrito:
  • Sauteed green peppers
  • Caramelized onions
  • Freshly shredded lettuce of your choice
  • Some cheese to melt onto your burrito (i.e.: mozzarella, cheddar)
Wrap it up and enjoy the burst of flavour with every bite!
